I don’t actually blog about recipes and so forth, however I came across a simple but super DELICIOUS recipe that I found online which I just had to try out. The original recipe was a little bleak and plain so I decided to tweak it a little by adding a few extra ingredients to make my own type of dish.
3 x Chicken Breasts (Boneless)
1 x Can Chicken Broth
1 x Packaged Frozen Spinach (Thawed and Drained)
1 x Tub of Cream Cheese
10 x Cherry Tomatoes
1 x Packet of Penne Pasta
5 x Mushrooms
Teaspoon of Crushed Garlic
Black Pepper to taste
- Bring large pot of water to a boil, and stir in penne pasta.
- Meanwhile, in a large skillet over medium heat, cook chicken cubes in broth; simmering until done.
- Stir in cubed cream cheese, spinach and mushrooms. Add the crushed garlic. Return to simmer and stir occasionally.
- Stir in cherry tomatoes.
- In a large bowl, mix together cooked, drained pasta and sauce. Sprinkle the black pepper over and mix well. Let stand a few minutes before serving.
